How to Bake Apple And Cranberry Torta

Ingredients needed to make Apple And Cranberry Torta:
For the torta:
- 1 cup all purpose flour
- 4 eggs
- 1 ½ tsp vanilla extract
- 1 ½ tsp baking powder
- 1/3 cup sugar
- 1 tsp ground cinnamon
- 6 tbsp salted butter
- 1 ½ tbsp fresh orange zest
- ¼ cup orange juice
- 2 ¼ cup apples, peeled, cored and diced
- ½ cup dried cranberries
- ½ cup walnuts, chopped
- Pinch of salt
For the whipped cream:
- 1 cup whipping cream
- 1 tsp cardamom seeds, crushed
- 2 tbsp powdered sugar
Cooking instructions for Apple And Cranberry Torta:
- Warm up your oven to 350 degrees F.
- Toss the pecans into a baking sheet and toast in the hot oven for about 5 minutes or until they brown slightly.
- Meanwhile, place the dried cranberries in a microwave-proof bowl and add a splash of orange juice into it.
- Cook it in the microwave oven briefly for about 15 seconds, until the berries soak in the juice and swells up; set aside.
- Place the flour in a medium bowl and stir in baking powder, ground cinnamon as well as a dash of salt.
- Sift them together in a large mixing bowl and set aside.
- Spoon the butter into a separate bowl and whisk it thoroughly with an electric mixer, along with sugar, until it creams into a light, fluffy mixture.
- Crack the eggs, one at a time, and beating them into the mixture after each addition, with the mixer set at moderately high speed, until all of them incorporate to form a uniform, pale yellow mixture.
- Stir in a splash of vanilla extract and fold in the dry mixture gradually at much lower speed.
- Stir in the apples as well as soaked cranberries, followed by the remaining ingredients, until they are distributed evenly throughout the mixture.
- Grease a 10’’ baking dish with small amount of oil or butter and pour the batter into it.
- Smooth out the surface with a spatula and bake in the oven for 35-40 minutes or until the cake tester comes out spotless when inserted within it.
- While the torta bakes, whip the cream with an electric mixer, set at moderate high speed until it fluffs up.
- Whisk in sugar gradually, followed by the crushed spice until they are well combined and the mixture forms soft peaks.
- Remove the torta from the oven and allow to cool for about 15 minutes.
- Slice and serve alongside a dollop of spiced whipped cream.
