How to Cook Buffalo Wings with Blue Cheese Dressing

Serves: 6-8

Ingredients needed to make Buffalo wings with blue cheese dressing:

For the wings:

  • 3 lb chicken wings, each halved and wing tips trimmed off.
  • 12 oz moderately hot sauce
  • ½ cup buttermilk
  • 4 tbsp unsalted butter, melted
  • ½ tsp garlic powder
  • Celery sticks, for garnishing

For the dressing:

  • ½ cup mayonnaise
  • ½ cup plain yogurt
  • ½ cup blue cheese, crumbled
  • 1 tbsp white wine vinegar
  • Dash of worchestershire sauce
  • ¼ tsp granulated sugar
  • ½ tsp kosher salt
  • Freshly ground black pepper to taste

Cooking instructions for Buffalo wings with blue cheese dressing:

Pour a cup of hot sauce into a large resealable plastic bag, followed by buttermilk.
Sprinkle a dash of garlic powder and stir well to mix.
Put the wings into the bag, seal it while squeezing out any trapped air and shake well to coat the wings with the marinade.
Leave it in the refrigerator for a couple of hours, shaking it at intervals; you can also marinate it overnight for better results.
Set the temperature of your broiler to high and warm it up.
Spread a sheet of aluminium foil over a baking sheet and place a wire rack on top.
Take out the wings from the plastic bag and do away with any excess marinade.
Place them at some distances apart on the rack and grill them for about 12 minutes or until the chicken is cooked through and turns delicious golden brown.
Flip the wings over with tongs and continue to grill them for another 12 minutes or until they turn crisp.
While the wings cook, whisk the butter and rest of the hot sauce together in a large bowl and keep it aside.
To make the blue cheese dressing, whisk the mayonnaise and yogurt together until they turn smooth and gooey.
Stir in a splash of vinegar, along with sugar, worchestershire sauce, cheese, salt and black pepper; leave it in the refrigerator until the buffalo wings are ready.
Throw the grilled buffalo wings into the sauce-butter mixture and toss them well to coat.
Serve them alongside celery sticks and a cup of blue cheese dressing.
