Easy One Pot Lasagna Soup

This easy one pot lasagna soup is easy to make a great way to use up extra pasta. You can use broken lasagna noodles for this soup or really any pasta of choice.

Your soup will be ready in just about 30 minutes! Quick and easy! Plus only one pot to clean up afterward.

One Pot Cook Lasagna Soup

Quick and easy one pot lasagna soup is a great way to use broken pasta or extra pasta.

Ingredients

  • 8 oz malfaldine pasta, broken into smaller bits
  • 1 can (28 oz) diced tomatoes, juice reserved
  • 1 ½ lb hot Italian sausage, casing peeled off
  • 4 garlic cloves, finely minced
  • 2 onions, finely chopped
  • ½ cup fresh basil, finely chopped
  • 2 tbsp tomato paste
  • 6 cups chicken stock
  • 2 tsp dried oregano
  • 2 bay leaves
  • 2 cups mozzarella cheese, grated
  • ½ cup parmesan cheese, finely grated
  • 8 oz ricotta cheese
  • 1/8 tsp freshly ground black pepper
  • ¼ tsp salt
  • 1 tbsp olive oil

Instructions

  1. Drizzle oil in a large pot and heat it over moderate flame.
  2. Throw in the sausage meat and sauté for about 5 minutes, while stirring often and breaking it into crumbles with the spoon.
  3. Once the meat browns, transfer it to a bowl, lined with paper towel to drain out excess grease.
  4. Skim off the sausage fat in the pot, leaving only 1 tbsp of it behind.
  5. Toss the onions into the hot fat and sauté for about 5-7 minutes, while stirring at times, until it softens.
  6. Throw in the garlic, along with a dash of crushed dried oregano and continue to stir fry for another minute or until the mixture is fragrant.
  7. Spoon in the tomato paste and stir them well together before cooking it for about 5 minutes or until the mixture turns rustic brown.
  8. Dump the sausage back to the pot, along with the diced tomatoes and its juices, bay leaves and bay leaves.
  9. Bring the mixture to a boil and lower the heat to simmer it, covered for half an hour.
  10. Throw in the pasta pieces and increase the heat to moderate-high to bring it to a boil.
  11. Continue to heat the mixture for about 8 minutes or until the pasta is cooked to al dente.
  12. Throw away the bay leaves and sprinkle a dash of salt, black pepper and red pepper flakes to season.
  13. Add the chopped basil and give it a good stir to mix thoroughly.
  14. Toss the parmesan and ricotta together in a small bowl, and season with salt and black pepper.
  15. Spoon equal amount of the cheese mixture it into serving bowls top it up with half of the grated mozzarella.
  16. Spoon the hot soup into the serving bowls and finish it off with rest if the mozzarella on top.
  17. Serve hot with garlic bread and have fun on a chilly winter night.
