Ingredients needed to make Pumpkin Puff Pastry Cone:

  • ¾ cup canned pumpkin puree
  • 1 cup caramel topping, warmed
  • 6 ice cream cones
  • ½ package (17.3 oz) puff pastry sheets, thawed
  • 1 package (3.4 oz) instant vanilla pie filling mix
  • ½ cup milk
  • ½ cup heavy cream
  • ½ cup toasted pecans, chopped
  • 2 tbsp sugar
  • All purpose flour, as dusting
  • ¾ tsp ground cinnamon
  • Vegetable oil cooking spray

Cooking instructions for Pumpkin Puff Pastry Cone:

  • Warm up your oven to 400 degrees F.
  • Wrap a sheet of aluminum coil around each cone to cover every inch of it and tuck the free ends within the hollowed cavity of the cone.
  • Grease the foiled cones with vegetable oil cooking spray and set aside.
  • Dust some flour on the working surface generously and spread the puff pastry across it.
  • Slice it along the crease marks to get 3 equal-sized rectangles and slice each of them longitudinally into 4 strips.
  • Pinch the ends of a couple of strips together and wind it around each cone, overlapping the edges slightly and grease it with more cooking spray.
  • Dust a tsp of sugar on it and place it on a pre-greased baking sheet, with the seam side of the strip facing down.
  • Make rest of the wrapped cones in a similar manner and place them on the baking sheet, side by side.
  • Bake them in the oven for about 15 minutes or until they brown nicely.
  • Set aside on a wire rack, outside the oven, until cool enough to handle.
  • Carefully remove the cones from the baked strips and set aside.
  • Empty the can of pumpkin puree into the milk and whisk them well together along with a dash of cinnamon and the pie filling mix, until they form a thick blend.
  • Pour the heavy cream in a separate bowl, attached to a stand mixer, and whisk it at high speed until they form soft peaks.
  • Pour it into the pumpkin mousse and fold it until they blend together thoroughly to form a uniform blend.
  • Stuff it into the pastry cones and set aside.
  • Fold the pecans into the caramel topping until they are distributed evenly throughout the mixture.
  • Drizzle it over the stuffed pastry cones and serve right away.
