How to Bake German Apple Pancakes With Fruit Butter

Makes 6 pancakes

Ingredients needed to make German Apple Pancakes With Fruit Butter:

For the fruit butter:

  • 6 cups fresh fruit of your choice, peeled
  • ½ cup granulated sugar
  • ¼ cup lemon juice
  • 1 tbsp lemon zest, finely grated
  • 1 cup water

For the pancakes:

  • 1 lb Granny Smith apples
  • 2/3 cup all purpose flour
  • ¾ cup milk
  • 3 large eggs
  • ¼ cup light brown sugar
  • 5 tbsp granulated sugar
  • 1 tbsp freshly squeezed lemon juice
  • 4 tbsp unsalted butter, 2 tbsp of it is melted
  • ½ tso salt
  • ½ tsp ground cinnamon
  • Icing sugar, for dusting

Cooking instructions for German Apple Pancakes With Fruit Butter:

  • To make the butter, dump the fruit, sugar, water as well as juice and zest of a lemon into a dutch oven.
  • Cook the mixture over high heat until they start boiling and reduce it to a simmer.
  • Cook the mixture for about half an hour, while mashing it with the spatula and stirring at times, until it thickens.
  • Continue to simmer the puree until it thickens further and transfer it to a food processor.
  • Pulse them into a smooth puree and pass it through a sieve to do away with fruit lumps, if any.
  • Store it in an air-tight container until required.
  • Warm up your oven to 450 degrees F.
  • Grease the sides and base of 6 jumbo muffin tins with butter and dust with granulated sugar.
  • Peel and core the apples to cut it into 12 wedges and slice each wedge into 3 pieces.
  • Place the apple chunks in a medium bowl and add the brown sugar, a dash of ground cinnamon and a splash of lemon juice; toss them all together to mix well.
  • Add a couple of tbsp butter into a 10’’ skillet and melt it over moderate heat.
  • Throw in the apples and sauté for about 10-12 minutes, while stirring at times, until they caramelize.
  • Remove from heat and set aside for about 5 minutes to let the apples cool down.
  • Split the apples equally into the prepared muffin tins and keep them aside until necessary.
  • Add flour, salt, 2 tbsp melted butter, 5 tbsp granulated sugar and milk into a food processor.
  • Crack the eggs into it and run the processor for about 3 minutes or until they blend together to form a uniform batter, free of lumps.
  • Cover the apples with the batter and place the tins into the oven.
  • Set the temperature of the oven down to 400 degrees F and bake the pancakes for about 15 minutes or until they puff up and are set.
  • Take them out of the oven and invert them onto serving plates.
  • Dust with icing sugar and serve right away with a dollop of fruit butter on top.
