How to Cook Beef Stroganoff

Beef Stroganoff, also known as Beef Stroganov, or in Russian Бефстроганов Befstróganov, is a traditional Russian main course made with beef in a savory sour cream sauce.  It originated in Russia in the 19th century and has since become a worldwide favorite. Make it with mushrooms and serve it over egg noodles.

Classic Beef Stroganoff with beef and mushrooms in a sour cream sauce.
Ingredients
  • 2 lb beef chuck roast, chopped into ½’’ thick chunks
  • 8 oz mushrooms, sliced
  • ½ onion, diced
  • 2 garlic cloves
  • 1 tbsp fresh chives, thinly sliced
  • 1 lb wide egg noodles, cooked and tossed in melted butter
  • 2 cups beef broth, divided
  • ½ cup white wine
  • ¾ cup sour cream
  • 1 ½ tbsp all purpose flour
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper to taste
Instructions
  1. Rub lots of salt and black pepper all over the beef and set aside for about 15 minutes.
  2. Heat oil in a large skillet over high flame and place the seasoned beef on it.
  3. Brown the beef on either side over high heat and transfer it to a plate.
  4. Reduce the heat to medium and melt the butter in the skillet.
  5. Throw in the onions as well as mushrooms and stir fry them for about 5-6 minutes or until the later browns slightly.
  6. Stir in the garlic and continue to saute for another minute before sprinkling the flour over it.
  7. Cook the mixture for a couple of minutes, while stirring frequently before pouring in a splash of white wine.
  8. Empty a cup of beef broth into the skillet and stir them all together to mix thoroughly; simmer the gravy for a while.
  9. Return the meat to the skillet and add rest of the broth to it.
  10. Continue to simmer the mixture over slow flame for about 5 minutes.
  11. Fasten a lid tightly and braise the meat for an hour or until it is cooked through while stirring at times.
  12. In case, the mixture tends to dry up, feel free to add more water or broth until it reaches your desired consistency.
  13. Whisk in the sour cream, followed by the chives and adjust seasonings if needed.
  14. Pile up the noodles on a serving plate and spoon the beef stroganoff over it.
  15. Serve immediately.
