How to Cook Grilled Flank Steak with Spinach

Serves: 4

Ingredients needed to make grilled flank steak with spinach:

  • 1 ¼ lb beef flank steak, fats trimmed
  • 2 tbsp olive oil
  • 1 tbsp fresh garlic, finely chopped
  • ½ cup fresh lemon juice
  • Salt and freshly ground black pepper to taste

For the spinach:

  • 2 tbsp butter. Softened
  • 1 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 10 oz baby spinach
  • Salt and black pepper to taste

Cooking instructions for grilled flank steak with spinach:

  • Cut either sides of the flank steak with a sharp knife to give it the shape of a diamond.
  • Pour the lemon juice into a large resealable plastic bag or zipper-lock storage bag, along with the garlic and a dash of salt.
  • Drizzle olive oil into the bag and put the steak inside.
  • Seal the bag while squeezing out any trapped air and flip it over a number of times until the meat is well coated with the marinade.
  • Leave it in the refrigerator for a couple of hours or more if you can manage.
  • Set the grill rack about 4-6 inches above the source of heat and preheat it over medium-hot charcoal fire.
  • Take the marinated meat out of the bag and season its either side with lots of black pepper.
  • Place it on the hot grill rack and broil for about 5-7 minutes on every side to enjoy it medium-rare. You can vary the cooking time according to your preference of doneness but make a point to avoid overcooking or your meat will end up tough and chewy.
  • While the steak is cooking, melt the butter in a saucepan and drizzle olive oil over it.
  • Once they heat up, throw in the garlic and saute for a couple of minutes over moderate heat.
  • Stir in the spinach and continue to saute them for about 5 minutes or until they are wilted.
  • Adjust the seasonings according to your preference and pile it up on serving plates.
  • Once properly grilled, place it on a cutting board and allow to cool for about 5 minutes.
  • Carve out thin slices diagonally and place them on the bed of cooked spinach.
  • Serve and enjoy!
