How to Cook Chicken Stir Fry
Serves: 4-6
Ingredients needed to make chicken stir fry:
- 1 lb boneless chicken breast, diced
- 6 carrots, sliced into long strips
- 1 large onion, finely chopped
- 1 green bell pepper, finely chopped
- 4 garlic cloves, minced
- 10 white button mushrooms, halved
- 2 tbsp balsamic vinaigrette dressing
- 1 tbsp cajun seasoning
- ½ cup brown sugar
- 4 tbsp soy sauce
- 1 tbsp yellow mustard
- Salt and black pepper to taste
Cooking instructions for chicken stir fry:
- Drench the diced chicken with soy sauce and pour the vinaigrette and mustard over them.
- Sprinkle the brown sugar over the chicken and stir well to mix; set the mixture aside for about 10 minutes to marinate.
- Drizzle oil in a large wok and heat it over moderately high flame.
- Saute the onions until they caramelise and throw in the garlic.
- Continue to stir fry the mixture until the garlic turns fragrant and stir in the carrots.
- Sprinkle a dash of cajun seasoning, pepper as well as salt and continue to cook for about 20 minutes.
- Add the bell pepper and saute further for a couple of minutes over high heat.
- Add the marinated chicken, along with the marinade and cook the mixture until the chicken is cooked through.
- Stir in the mushrooms and continue to cook for about 5 minutes.
- Reduce the mixture to a simmer and heat it for about 5-10 minutes or until the cooking liquid is completely absorbed.
- Spoon the stir-fried chicken and veggies over a bed of steamed white rice and serve right away.
