How to Make Taco Cheesecake
Serves: 18-20

Ingredients needed to make Taco Cheesecake:
For the cake:
- ½ cup sour cream
- 2 eggs, beaten
- ½ cup ripe black olives, chopped
- 1 can (4 oz) green chilies, drained and chopped
- ½ cup salsa
- 3 tsp cornmeal
- 1 package taco seasoning
- 1 cup Monterey Jack Pepper cheese
For the topping:
- 1 jalapeno pepper, sliced
- ¼ cup green onions, sliced
- ¼ cup black olives, sliced
- 1 cup sour cream
- ¼ cup cherry tomatoes, sliced
Cooking instructions for Taco Cheesecake:
- Grease a 9’’springform pan with small amount of oil and dust it with cornmeal; set aside.
- Place the cream cheese in a bowl and whisk it thoroughly until it turns smooth.
- Sprinkle the taco seasonings over it and whisk it into the mixture, along with salsa and sour cream.
- Crack the eggs into the mixture and beat it into the mixture.
- Fold in the olives, chilies and cheese until well combined and tip the mixture into the prepared pan.
- Place it onto a baking sheet and bake in the oven for half an hour at 350 degrees, until the cake is baked through.
- Place it on a wire rack and set aside to cool for about 10 minutes.
- Loosen up the cake using a sharp knife and set aside for another hour to cool completely.
- Leave in the fridge overnight and remove the cake from the pan.
- Smother the sides and surface of the cheesecake with sour cream and decorate with onions, olives, jalapeno slices as well as olives on top in a concentric manner.
- Slice and serve alongside crackers.
