Easy Cajun Shrimp Po Boy Sandwich

This is the easy way to make a shrimp poboy sandwich.  The shrimp are pan seared (you can also grill them if you prefer), so it also is a bit healthier than making it with fried shrimp.

I love a good Cajun poboy, but using fried shrimp or fish is more work or calories. I found that pan frying the shrimp and blackening them tastes better and is healthier!

I like to serve this a a spicy remoulade, but you can also substitute plain mayo for an even quicker and easier shrimp poboy.

Healthy and easy shrimp poboy sandwich recipe

Ingredients

  • 4 small French sandwich rolls
  • 1 lb medium shrimp, peeled, deveined and tails removed
  • 2-3 tomatoes, sliced
  • ½ head iceberg lettuce or bag of baby spinach
  • 2 tbsp Cajun seasoning
  • 2 garlic cloves, minced
  • Salt and Pepper to taste
  • 2 tablespoons olive oil
  • For the remoulade:
  • 1 ¼ cups mayonnaise
  • ¼ cup creole mustard
  • 1 tsp hot Tabasco sauce
  • 1 tsp vinegar
  • 2 tsp Cajun seasoning
  • 1 tbsp sweet paprika
  • 1 large garlic clove, minced

Instructions

  1. To make the remoulade, combine the ingredients into a bowl and whisk them all together until they blend thoroughly into a uniform mixture; let it rest for half an hour or until the time of serving.
  2. Wash shrimp and pat dry
  3. Toss the shrimp with Cajun seasoning and salt and pepper
  4. Heat olive oil in a non-stick skillet.
  5. Pan sear shrimp until opaque and slightly blackened
  6. To make the sandwich, slice the sandwich rolls longitudinally into equal halves and spread the prepared remoulade across the crustier side of bottom half of the bread roll.
  7. Arrange 3-4 tomato slices, lettuce or spinach, and a large portion of shrimp on the roll and close the sandwich.
