How to Cook Buttermilk Fried Chicken

Ingredients needed to make Buttermilk Fried Chicken:
- 4 lb chicken, chopped into serving pieces, washed to clean and blotted dry
- 1 quart buttermilk
- 4 cups all purpose flour
- ½ cup Tabasco sauce
- 1 tbsp cayenne pepper
- 3 tbsp kosher salt
Cooking instructions for Buttermilk Fried Chicken:
- Pour the buttermilk in a large bowl and whisk in the tabasco sauce until well combined.
- Drop in the chicken chunks and stir them all together until well coated.
- Wrap the up in a sheet of plastic wrap and set aside for a couple of hours to marinate.
- Spread sheets of parchment paper across a couple of baking sheets and keep them aside until required.
- Empty the cups of flour into a large, resealable plastic pouch and stir in a dash of cayenne pepper and kosher salt.
- Seal the pouch and shake well to mix them further.
- Stuff the marinated chicken into this pouch, a couple of them at a time, and seal it back again.
- Flip the pouch several times to coat the chicken well with the flour and arrange them on the lined baking sheets, after shaking off any excess.
- Empty a couple of cups oil into a deep-bottomed heavy saucepan and heat until it shimmer but doesn’t smoke.
- Working in batches, lower the dredged chicken into it and fry them for 25 minutes, flipping them over at intervals, until the meat is properly cooked and the coating turns crispy golden brown.
- Lift them up, using tongs or slotted spoon, onto a plate lined with paper towels to get rid of any grease.
- Meanwhile, warm up your oven at low temperature setting.
- Once all the chicken are fried, return them to the baking sheets and bake them in the hot oven for 5 minutes, while keeping it door open to ensure that the chicken retain its crispiness.
- Arrange them on a large serving plate and serve right away with your favourite dipping sauce.
