How to Make a Power Bar

Yields: 10 bars

Ingredients needed to make Power Bar:

  • 2 cups rolled oats
  • ¼ cup raw wheat germ
  • 2 tbsp flax seed meal
  • ¾ cup cherries, dried, pitted and finely chopped
  • ½ cup raw walnut halves, finely chopped
  • ½ cup raw almonds, sliced
  • 2 tbsp dried coconut flakes, unsweetened and untoasted
  • ¼ cup honey
  • 1 tbsp unsalted butter, plus more for greasing
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/8 tsp fine salt

Cooking instructions for Power Bar:

  • Warm up your oven to 350 degrees F and with a rack midway within it.
  • Grease the base of an 8’’ square baking pan with a small knob of butter.
  • Empty the cups of rolled oats into a rimmed baking sheet, along with the nuts, coconut, flax seed meal as well as wheat germ oil.
  • Toss them together to mix well and spread them over the baking sheet in a single layer.
  • Place the sheet in the oven and toast in the oven for 12 minutes or until the walnuts brown slightly.
  • Place the sheet on a wire rack and set aside.
  • Lower the oven temperature slightly to 300 degrees F.
  • Place the measured butter and sugar in a medium saucepan and add a splash of honey into it.
  • Stir them all together along with a splash of vanilla extract, ground cinnamon and a pinch of salt.
  • Cook over moderately low heat, stirring often, until the sugar dissolves and blends along with rest of the ingredients into a smooth, uniform mixture.
  • Turn off the heat and fold in the toasted mixture until the latter is well coated with the syrup.
  • Spread the final mixture onto the greased baking dish and set aside until it is cool enough to handle.
  • Moist your hands and press it firmly before baking for about 10 minutes, or until it gives out a pleasant nutty aroma.
  • Set aside on a wire rack to cool to room temperature.
  • Flip the pan over onto a chopping board to remove the granola slab onto it and slice it into 10 rectangle bars.
  • Wrap each of them with a plastic sheet and store them for 3 days at room temperature.
  • Munch away and have fun!
