How to Cook Corn Soup

Ingredients needed to make Corn Soup:
- 8 ears yellow corn, shucked
- 6 scallions, thinly sliced
- 1 ½ cups water
- 2 tbsp unsalted butter
- 1 ½ cups whole milk
- ½ tsp minced chipotles in adobo sauce
- Freshly ground black pepper to taste
- 2 tsp kosher salt
Cooking instructions for Corn Soup:
- To remove the kernels from the cob, line the base of a large bowl with several layers of kitchen papers and point the conical tip of a cob toward the bowl, holding it by the steam.
- Slice off the kernels from the cob into the bowl, while rotating it until all the corn is removed.
- Throw away the cob and remove the corn kernels from rest of the cobs in a similar fashion; set ½ cup corn kernels aside.
- Add a knob of butter in a large saucepan and melt it over moderate heat until it foams.
- Throw in 2/3 of the sliced scallions into the melted butter and give it a nice stir along with minced chipotles, a dash of ground black pepper and ½ tsp salt until well mixed.
- Sauté the mixture for about 3 minutes, stirring often, until the scallions soften.
- Stir in the corn kernels and empty the cups of water as well as milk into the pan and stir them all together along with rest of the measured salt until well combined.
- Cook the mixture over moderately high heat until it starts boiling and reduce it to a simmer.
- Continue to do so for about 15 minutes, or until the flavours are infused into the soup and the corn kernels soften yet remains firm.
- Tip the mixture, small amount at a time, into a blender and blitz it into a smooth puree.
- Pass the puree through a fine mesh sieve to strain into a large bowl; press the residues in the sieve to extract maximum juice from it and throw away the solids.
- Stir in the reserved kernels into the strained, creamy soup and sprinkle a dash of seasonings to taste/
- Leave in the fridge for about 3 hours to chill.
- Ladle it into serving bowls and sprinkle rest of the scallions on top of each serving.
- Serve cold.
