How to Make Petite Camembert Sandwiches

Ingredients needed to make Petite Camembert Sandwiches:

  • 1 loaf (1 lb) fresh rustic white bread, sliced into ½’’ thick slices
  • ½ lb camembert cheese, shredded into smaller chunks
  • 1 lb cremini mushrooms, roughly chopped
  • 1 bunch leeks, halved longitudinally and sliced into ½’’ pieces
  • 1 tbsp fresh sage leaves, finely chopped
  • ½ bunch fresh thyme, leaves picked
  • 8 tbsp unsalted butter
  • 5 tbsp extra virgin olive oil
  • 1 cup low-sodium vegetable broth
  • Salt and freshly ground black pepper to taste

Cooking instructions for Petite Camembert Sandwiches:

  • Heat 2 tbsp olive oil in a saucepan over moderate flame until it begins to shimmer and toss the chopped leeks and thyme leaves into it.
  • Sauté for about 5 minutes, stirring often, until the leeks soften and pour in a couple of tbsp wine.
  • Cook further until the wine is cooked off and pour in the vegetable broth.
  • Whisk 2 tbsp butter into it until mixed well and sprinkle dash of salt and ground black pepper generously to season.
  • Give them a nice stir until well combined and simmer for about 20 minutes while stirring at times.
  • Transfer the leeks onto a plate using slotted spoon and keep aside until necessary.
  • Carve out 1 ½’’ wide circles from the bread slices with the help of a cookie cutter, until you have about 24 of them.
  • Heat rest of the oil in a clean skillet, along with 3 tbsp butter and toss the sage and mushrooms into it.
  • Stir fry for about 5 minutes and add a splash of remaining wine.
  • Cook until it ebbs away and continue to sauté for 5 more minutes or until the mushrooms dry out to become somewhat crispy in texture.
  • Melt rest of the butter in a separate, small saucepan and remove from heat.
  • Place few chunks of camembert cheese on top of one bread circle and spread a tsp of the mushroom blend on top.
  • Place another bread circle over it to close the sandwich and smother it with a lashing of the melted butter.
  • Make rest of the sandwiches in a similar fashion and arrange them on a hot skillet.
  • Toast each side of the sandwiches for a minute and transfer them onto a serving platter.
  • Sprinkle a tsp of the sautéed leeks over each sandwich and insert a toothpick through each of them to secure.
  • Serve and have fun!
