How to Make Green Tea Frozen Yogurt

Ingredients needed to make Green Tea Frozen Yogurt:
For the frozen yogurt:
- 2 x 500 gm greek yogurt
- 2 tbsp green tea matcha powder
- 200 gms caster sugar
For the matcha cream sauce:
- 4 tsp matcha green tea powder
- 1 cup heavy cream
- 2 tbsp hot water
- 6 tbsp sugar
For the sesame brittle shards:
- 4 tbsp sesame seeds, toasted
- 200 gms caster sugar
Cooking instructions for Green Tea Frozen Yogurt:
- Spoon the yogurt into a large mixing bowl and whisk in the matcha powder as well as the sugar until the latter dissolves completely.
- Place a lid on top and leave it in the fridge for an hour to chill.
- Spoon the mixture into an ice cream machine and churn it according to the manufacturer’s instructions until they turn creamy and gooey.
- Spoon it into a freezable container and leave it in the freezer for about 5 hours to set.
- For the brittles shards, spread a parchment paper across the baking sheet.
- Add the sugar to a saucepan and heat it for about 5 minutes, without agitating it even once, until it melts and starts bubbling.
- Fold in the sesame seeds into the golden melted sugar and spread it across the lined baking sheet, into a thin layer.
- Set aside until it cools down and hardens.
- Break the brittle into smaller bits and seal them in an airtight container to store over a week.
- For the sauce, toss the green tea powder and sugar together in a bowl until well combined.
- Pour in the hot water and stir them all together until they blend into a smooth mixture.
- Fold in the heavy cream until properly blended and set aside until the frozen yogurt sets.
- An hour before serving, take the frozen yogurt out of the freezer and set aside to let it soften a bit.
- Scoop it out into small ice cream bowls and top it up with a dollop of the green tea cream sauce.
- Sprinkle the sesame brittle shards on top and serve chilled.
