How to Make Banh Mi

Ingredients needed to make Banh Mi:
- 4 Vietnamese style baguettes
- 1 sweet potato, cut into 1/4’’ slices
- 1 cup pickled carrot
- 1 cup pickled daikon
- 1 avocado, thinly sliced
- 1 jalapeno pepper, deseeded and stemmed, sliced into thin strips
- 1 cucumber, deseeded and sliced into 8 strips
- Bunch of fresh cilantro leaves
- ¼ cup cornstarch
- ½ cup all purpose flour
- ½ cup ginger-scallion oil
- 1 ½ cup quarts vegetable oil
- 2 tsp soy sauce
- ¾ cup sparkling water
- Kosher salt to taste
Cooking instructions for Banh Mi:
- Warm up your oven to 350 degrees F and heat up oil in a Dutch oven to 400 degrees F at the same time.
- Place flour in a bowl and stir in ½ tsp salt and cornstarch until well combined.
- Pour in sparkling water while beating it into the mixture at the same time until they blend together to form a uniform, smooth batter.
- Plop the sweet potato slices into the batter, few at a time, and stir them to coat well with the mixture.
- Shake off any excess batter and dip them into the hot oil to deep-fry, agitating them at times, for a couple of minutes or until they turn crispy golden brown.
- Drain them out, using a slotted spoon, into a plate lined with kitchen paper and toss well with a dash of salt.
- Arrange the baguettes in the oven rack and toast them for about 4 minutes in the oven or until they become crisp.
- Add a lashing of soy sauce on either halves of the baguettes and followed by a drizzle of ginger-scallion oil over them.
- Arrange few avocado slices across the bottom layer of each baguette, followed by a layer of sweet potato slices.
- Drizzle some more ginger-scallion oil on top and spread the pickled veggies across it.
- Top it up with layers of jalapeno, cucumber slices and cilantro leaves.
- Spread another layer of avocado slices on top and sprinkle a dash of seasonings on top.
- Place the top layer of baguette over the avocado layer and slice crosswise.
- Make rest of the sandwiches in a same way and serve right away.
