  • Empty the can of refried beans into a bowl and tip the contents of the pan into it.
  • Sprinkle the chopped cilantro on top and stir them all together until well combined.
  • Spread some of the above mixture along one half of each tortilla and top it up with a sprinkling of grated cheese.
  • Fold it into a semi-circle and seal the open ends together by inserting a toothpick through them.
  • Arrange the quesadillas onto a baking tray and bake in the hot oven for 10 minutes or until the tortillas turn golden brown and the cheese within them, melts.

  • Pass it through a fine mesh sieve and strain it into a bowl.
  • Drizzle the oil in a steady stream while whisking it into the mixture at the same time until fully incorporated.
  • Blend in the vinegar in a similar fashion and stir in a splash of salt as well as ground black pepper to season.
  • Scatter the red onion plus avocado chunks into it and give them a nice stir to mix well.
  • Arrange the toasted quesadillas on a large serving platter and spoon the prepared salsa over them.
  • Sprinkle extra chopped cilantro on top to garnish and serve warm alongside a bowl of sour cream and lime wedges.
