How to Cook Rouladen

Ingredients needed to make Rouladen:

  • 1 package dumpling mix
  • 4 thin beef sirloin slices, each ¼’’ thick
  • 4 bacon slices
  • 4 dill pickle spears
  • 4 tbsp fresh parsley, chopped
  • 2 tbsp butter, diced
  • 2 tbsp extra virgin olive oil
  • ¼ cup sour cream
  • 4 tsp Dijon mustard
  • 2 cups chicken stock
  • 2 tbsp all purpose flour
  • Salt and freshly ground black pepper

Cooking instructions for Rouladen:

  • Process the dumpling mix according to the instructions provided in its package
  • Fill a large pot with salted water and bring it to a boil.
  • Shape small portion of the dumpling mix into 2’’ thick round balls and drop them into the boiling water.
  • Reduce them to a simmer and cook them for 15 minutes.
  • Meanwhile, fry the bacon in a skillet over moderate heat, for 3 minute or until they turn crispy and the fat is rendered.
  • Drain them out onto a plate, lined with kitchen papers to soak away excess fat and set aside.
  • Rub a dash of salt as well as ground black pepper all over the meat and spread a tsp of mustard onto each beef slice to cover one side completely.
  • Sprinkle some chopped parsley on top of each and place a bacon slice over it, near the edge of the slice, followed by a dill pickle spear on top.
  • Roll each of them into a cylinder and secure by tying with a kitchen twine around them.
  • Heat a sauté pan over moderately high flame and drizzle oil into it.
  • Spread it out and arrange the meat rolls on top.
  • Cook one side for a couple of minutes and then roll them slightly to cook further.
  • Continue to cook the meat rolls for 10-12 minutes, while rolling them from time to time, until they are browned.
  • Drain them out onto a plate and add a knob of butter into the same pan.
  • Heat until it melts and whisk in the flour until they blend thoroughly.
  • Cook the roux for a couple of minutes, stirring constantly, until the raw smell of the flour disappears.
  • Whisk in the chicken stock, followed by a dash each of seasonings, until well combined and cook for another minute or until heated through.
  • Beat in the sour cream until mixed properly and turn off the heat.
  • Slice off the twines from the heat and arrange one meat roll onto each serving plate.
  • Place a dumpling beside it and drizzle the prepared sauce all over each serving.
  • Serve hot.
