How to Cook Tom Yum Soup

Ingredients needed to make Tom Yum Soup:

  • 12 medium shrimps, shelled and deveined
  • Handful of assorted vegetables (cherry tomatoes, baby pak choy, broccoli florets)
  • Large handful of fresh shiitake mushrooms, sliced
  • 2 lemongrass stalks, minced
  • 1 tsp grated galangal
  • 3-4 garlic cloves, minced
  • 1 fresh red chili, minced
  • 2-3 kaffir lime leaves
  • Juice of a lime
  • ¼ cup fresh cilantro leaves
  • Handful of fresh Thai basil leaves
  • ½ cup coconut milk
  • 6 cups chicken stock
  • 1 tbsp soy sauce
  • 2 tbsp fish sauce
  • Dash of Thai chilli sauce
  • 1 tsp sugar

Cooking instructions for Tom Yum Soup:

  • Pour the stock into a large pot and heat it over high flame.
  • Stir in the minced lemongrass until well combined and drop in the lemongrass.
  • Bring the mixture to a rolling boil and reduce it to a simmer.
  • Stir in the ginger, garlic as well as chili, along with a splash of fish plus soy sauces and lime juice until they mix properly.
  • Throw in the mushrooms and continue to simmer over moderate heat for about 3 minutes.
  • Dump the veggies, fresh basil leaves as well as shrimp and simmer further for another 3 minutes or until the flesh of the shrimps turn opaque.
  • Lower the heat slightly and whisk in the coconut milk until they blend into the simmering soup and splash in some thai chilli sauce for added fiery heat.
  • Give it a final stir to mix well and ladle it into serving bowls.
  • Top it up with fresh cilantro and serve hot.
