How to Cook Tequenos

Ingredients needed to make Tequenos:
- 1 kg all purpose flour, plus more for dusting
- 1 egg
- 1 kg white cheese
- 1 cup vegetable oil, plus more for deep-frying
- 1 tsp sugar
Cooking instructions for Tequenos:
- Place the flour in a bowl and stir in sugar and a dash of salt.
- Crack the egg into it and pour in a cup of oil.
- Stir them all together until they blend thoroughly to form a smooth dough.
- Work it with your hands, after splashing some water and knead until it forms non-sticky.
- Leave the dough in the bowl for a couple of hours to rest.
- Meanwhile, slice the cheese into finger-like, ½’’ x ½’’ x 3’’ strips.
- Split the dough into small portions and roll them into balls, not larger than your fists.
- Flatten out each of them into ¼’’ thick rounds, using rolling pin.
- Slice each dough round into ¾’’ wide, long strips.
- Coil each strip around one cheese finger until it is completely wrapped and pinch the open end to seal.
- Sprinkle them with more flour until dredged evenly and set aside.
- Pour oil in a deep-bottomed skillet until it stands a couple of inches from its bottom and heat it to 350 degrees F.
- Lower the tequenos into the hot oil, few at a time to avoid overcrowding, and deep fry until they turn crispy golden brown.
- Drain them out into a paper lined plate and keep warm until all the tequenos are deep-fried.
- Arrange them onto a large serving platter and serve alongside your favourite dip.
