How to Cook Grilled Squid

Ingredients needed to make Grilled Squid:
- 4 medium whole squid, rinsed and prepared with the wings retained
- 2-3 red chillies, seeds removed and sliced
- Zest and freshly squeezed out juice of 2 lemons
- 1 lemon, sliced into wedges
- Handful of fresh mint, finely chopped
- 1 tbsp fennel seeds
- Kosher salt and freshly ground black pepper to taste
- Extra virgin olive oil
Cooking instructions for Grilled Squid:
- Place one squid on top of your cutting board, upside down, with its wings laid flat across it.
- Insert a large knife under it leave it likewise.
- Move another sharp knife crosswise across the squid, as if you are trying to carve out slices, though the knife underneath it will inhibit from cutting through it straight away.
- Process rest of the squid in a similar fashion and set aside.
- Place the fennel seeds in a mortar and sprinkle a large pinch of seasonings into it.
- Pound it with pestle into a slightly, grainy powder.
- Heat up a grill over hot charcoal fire.
- Rub it on the surface of the squid as well as within the slashes and place it on top of the hot grill rack and sear for half a minute, before flipping it over to char sear the other side.
- Continue to grill the squid likewise, turning it over at regular intervals, until the flesh turns opaque as well as whitish and appears firm on touch.
- Add a splash of lemon juice in a medium bowl and drizzle thrice as much EVOO into it.
- Whisk them thoroughly until well combined and sprinkle the chili as well as lemon zest into it.
- Add a dash of seasonings into it and stir them well together until they blend thoroughly.
- Smother the squid with the above mixture and serve warm alongside lemon wedges.
