How to Cook Tandoori Chicken Naan Pizzas

Ingredients needed to make Tandoori Chicken Naan Pizzas:
- 2 store brought naan breads
- 2 chicken breasts, chopped into small cubes
- 5 frozen mango chunks, thawed and cut into thin slices
- ½ red onion, peeled and thinly sliced
- 3 tbsp plain Greek yogurt
- 1 cup mozzarella cheese, shredded
- 2 tsp spicy tandoori paste, store brought
- Small handful fresh cilantro sprigs, leaves picked and finely chopped
- 1 tbsp extra virgin olive oil
Cooking instructions for Tandoori Chicken Naan Pizzas:
- Place the Greek yogurt in a medium mixing bowl and stir in the tandoori paste until well combined.
- Throw in the chicken cubes and give them a nice stir to coat well.
- Place a lid on top and leave in the fridge for at least an hour to marinate.
- Meanwhile, warm up your oven to 400 degrees F.
- Drizzle the oil into a medium skillet and heat it over slow flame until it starts shimmering.
- Toss the sliced onions into it and sauté for half an hour or until they caramelize nicely and turn completely soft, with a hint of sweetness.
- Drain them out into a bowl and set aside.
- Tip the entire content of the bowl with marinate chicken into the pan and cook for 6 minutes, stirring often, until the chicken is properly cooked and the sauce reduces slightly.
- Turn off the heat and spread the chicken as well as its sauce over both naan breads.
- Sprinkle the caramelized onions on top, followed by the sliced mangoes over them.
- Top both the naan pizzas with shredded cheese and place them into the oven.
- Bake them for 12 minutes or until the cheese melts and turns bubbly while the naan breads turn crispy.
- Remove from oven and sprinkle the chopped cilantro leaves on top.
- Slice them into large wedges, using a pizza cutter and serve right away.
