How to Cook Rib And Barley Stew

Ingredients needed to make Rib And Barley Stew: 

  • 2 lb boneless beef short ribs,  chopped into 1’’ pieces
  • 1 cup pearl barley
  • 1 can (14.4 oz) whole peeled tomatoes, drained and coarsely choppd
  • 2 carrots, halved longitudinally and sliced
  • 1 large onion, diced
  • 2 garlic cloves, finely grated
  • 2 celery ribs, halved longitudinally and sliced
  • 4 cups kale leaves, coarsely torn
  • 1 tbsp tomato sauce
  • 1 tsp soy sauce
  • ½ tsp marmite
  • 2 bay leaves
  • 2 tbsp canola oil
  • 1 quart low-sodium chicken broth
  • Kosher salt and freshly ground black pepper to taste

Cooking instructions for Rib And Barley Stew:

 

  • Place the short ribs in a bowl and toss them together with a dash of seasonings until well coated.
  • Drizzle oil in large saucepan and wait until it turns smoking hot over high heat.
  • Throw in the seasoned beef and brown for about 5 minutes without agitating it, before stir frying it for about 10 minutes until they brown throughout; lower the heat in case the base of the pan tends to burn.
  • Transfer it to a bowl and keep it aside.
  • Throw in the onion, celery as well as carrots into the hot saucepan and sauté for about 4 minutes, stirring at times, or until the veggies brown.
  • Add a splash of soy sauce, followed by garlic, marmite as well as tomato paste and stir them well together before cooking it briefly for half a minute or until they give out a delicious aroma.
  • Pour in broth as well as barley and empty the can of tomatoes into it.
  • Drop the bay leaves into the mixture and give it a good stir to mix well.
  • Toss the browned meat back into the pan and bring the mixture to boil over high heat.
  • Bring it back to a simmer and continue to cook likewise at slowest flame.
  • Put a lid on and simmer the stew, stirring occasionally, until the barley as well as beef is cooked through; it should take about a couple of hours.
  • Fold in the torn kale leaves and cook further for another couple of minutes, or until they wilt.
  • Adjust the seasonings and pour it into a serving bowl.
  • Serve hot.
