How to Cook Roman Style Chicken

Ingredients needed to make Roman Style Chicken:

  • 2 chicken thighs, skinned and bone-in
  • 4 chicken breast halves, skinned, with ribs
  • 3 oz prosciutto, chopped
  • 1 can (15 oz) diced tomatoes
  • ¼ cup fresh parsley leaves, chopped
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 garlic cloves, peeled and chopped
  • 2 tbsp capers
  • 1 tsp fresh oregano leaves, chopped
  • 1 tsp fresh thyme leaves, chopped
  • 1 ½ tsp freshly ground black pepper
  • 1 ½ tsp salt
  • ½ cup chicken stock
  • ½ cup white wine
  • ¼ cup olive oil

Cooking instructions for Roman Style Chicken:

  • Rub ½ tsp each of salt and ground black pepper all over the chicken pieces to season and set aside.
  • Heat the oil in a large, heavy-based skillet over moderate flame until it starts shimmering and place the seasoned chicken on it.
  • Cook them on either side until the brown evenly and transfer them onto a plate; set aside.
  • Toss the prosciutto pieces and chopped bell peppers into the same pan and sauté for 5 minute over moderate heat until the prosciutto crisp up while the bell peppers brown and soften.
  • Stir in the garlic and continue to stir fry for another minute before emptying the can of tomatoes into the pan.
  • Add a splash of wine into it and sprinkle the chopped herbs over them.
  • Stir them all together to mix well and return the cooked meat back into the skillet.
  • Pour in the stock and continue to cook the mixture until it starts boiling.
  • Lower the heat and bring it down to a simmer.
  • Place a lid on top to cover and continue to simmer for next half an hour, or until the chicken is properly cooked.
  • Sprinkle the parsley and capers on top and fold them into the sauce.
  • Pour it into a serving bowl and serve alongside cooked pasta or steamed rice.
