How to Cook Potato Waffles

Ingredients needed to make Potato Waffles:
For the waffles:
- 8 oz all purpose flour
- 9 oz mashed potatoes
- 6 egg whites
- 7 fl oz milk
- 1 tbsp baking powder
- 1 ¾ ox unsalted butter, melted
For the spinach sauce:
- Handful of baby spinach, finely chopped
- 2 egg yolks
- Juice of ½ lemon
- 2 ¾ fl oz white wine vinegar
- 2 tsp Dijon mustard
- 4 tsp caster sugar
- 9 fl oz olive oil
- Salt and freshly ground black pepper to taste
Cooking instructions for Potato Waffles:
- To make the sauce, add the egg yolks into a food processor, along with a splash of fresh lemon juice, mustard, white wine vinegar, sugar and a dash of seasonings.
- Blitz them until well combined and drizzle the oil in a steady stream while the motor of the processor still runs, until off it is used to form a thick, gooey mayonnaise.
- Stir in the chopped spinach until well coated with the mayo dressing and leave it in the refrigerator until the waffle is ready to serve.
- To make the waffles, place the flour in a large bowl and stir in the baking powder.
- Add the mashed potato and butter into it, followed by a splash of milk and stir them all together until they blend into an even mixture.
- Beat the egg whites in a separate bowl until they form stiff yet moist peaks and fold it into the flour mixture until they blend thoroughly.
- Grease a waffle iron with a lashing of oil and warm it up.
- Ladle some of the batter into the hot waffle iron and cook for about 5 minutes or until it is cooked through and turn golden brown in colour.
- Transfer it to a serving plate and keep warm while you prepare rest of the waffles in a similar fashion.
- Drizzle the spinach sauce all over each waffle and serve warm
