How to Cook Nacho Chicken Drumsticks

Ingredients needed to make Nacho Chicken Drumsticks:
- 12 medium chicken drumsticks
- 1 ½ cups cheddar cheese, grated
- 1 cup all purpose flour
- 4 large eggs
- 1 bag (9 oz) tortilla chips, finely crushed
- Kosher salt
- Vegetable oil, for frying
- Guacamole
- Fresh salsa
- Pickled jalapenos, sliced
Cooking instructions for Nacho Chicken Drumsticks:
- Place the flour and crushed tortilla chips into two separate bowls.
- Crack the eggs in another bowl and beat them thoroughly until they blend into a uniform, pale-yellow mixture.
- Dump the chicken drumsticks into the bowl with flour and toss them to coat well.
- Transfer them into the bowl with beaten egg, one at a time, and roll them onto the crushed chips to coat evenly.
- Press them gently so that the chip bits adhere to the chicken and lay them out onto a baking sheet; set aside.
- Warm up your oven to 425 degrees F.
- Pour enough vegetable oil into a large pot, so that it stands 3’’ from the base of the pot and heat it over moderately high flame until it reaches 350 degrees F.
- Lower the dredged drumsticks into the hot oil, few at a time, and deep-fry them for 15 minutes or until the chicken pieces are cooked through and turn crispy golden brown.
- Drain them out using slotted spoon, onto a plate lined with kitchen papers, to soak out excess oil.
- Sprinkle a dash of salt over them to season and arrange them onto a large, oven-proof plate.
- Scatter the grated cheese on top and pop the plate into the hot oven.
- Bake for 4 minutes or until the cheese melts completely and remove from oven.
- Spoon in the guacamole as well as salsa on top and scatter the pickled jalapenos over them.
- Serve right away.
