How to Make Baltimore Beef

Yields: 8 sandwiches

Ingredients needed to make Baltimore Beef:

For the meat:

  • 2 lb beef top round, chopped into 2 equal pieces
  • 1 tbsp fine sea salt
  • 2 tsp dried oregano
  • 1 tsp chili powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • Freshly ground black pepper

For the sandwiches:

  • 16 slices rye bread, lightly toasted
  • ½ cup mayonnaise
  • ½ cup prepared horseradish
  • ½ cup sour cream
  • 1 tsp garlic, minced
  • 2 white onions, finely sliced
  • 1 tsp fresh lemon juice
  • ½ tsp fine sea salt
  • Freshly ground black pepper

Cooking instructions for Baltimore Beef:

  • For the meat, spoon the mentioned spices in a large resealable plastic bag, seal and give them a nice shake to mix well.
  • Place a piece of meat into the bag, seal and shake again to coat well.
  • Transfer it into a plate and coat the other piece of meat in a similar fashion.
  • Stuff the meat back into the bag, seal it again and leave in the fridge for at least 24 hours to marinate.
  • To make the sauce, place the sour cream, horseradish, mayonnaise, lemon juice, garlic as well as a dash of seasonings into a bowl and whisk them thoroughly until well combined.
  • Place it in the fridge and chill for at least 4 hours.
  • Take the plastic bag with meat from the fridge and allow it to come up to room temperature.
  • Meanwhile, warm up your outdoor grill over hot charcoal fire and grease the grill grates with small amount of oil.
  • Place the meat onto the hot grill grates and grill one side for 7 ½ minutes, or until it is seared and grill patterns appear on them.
  • Flip them over and grill the other side similarly so that they are cooked to medium-rare doneness and their internal temperature rises up to 140 degrees F.
  • Allow it to cool, covered, for 5-10 minutes or until cool enough to handle.
  • Carve out paper thin slices from the meat, and pile them up on top of 8 bread slices, dividing them equally among them.
  • Top the meat with the prepared sauce and arrange few rings of onion over them.
  • Place the other slices of bread on top to complete the sandwiches and serve right away.
