How to Cook Huevos Rancheros

Serves: 2

Ingredients needed to make huevos rancheros:

  • 4 soft corn tortillas
  • 4 fresh eggs can (15 oz) whole tomatoes, fire-roasted
  • ½ medium onion, chopped
  • ½ can (6 oz) green Anaheim chilies, diced
  • 2 tbsp fresh cilantro, chopped
  • Dash of ground cumin
  • 1 tbsp chitpotle in adobo sauce, minced
  • 2 tbsp olive oil
  • 2 tsp butter
  • Salt and freshly ground black pepper to taste

Cooking instructions for huevos rancheros:

  • Heat olive oil in a large skillet over moderate heat and toss in the onions.
  • Saute them until they wilt and turn lucid while stirring frequently to prevent it from burning.
  • Empty the can of fire-roasted tomatoes, along with the juice into the skillet, breaking the whole ones with your hands as you do so.
  • In case, you are using fresh tomatoes, chop them first before adding to the skillet and extend the cooking time since they need some time to cook.
  • Throw in the chopped green chilies, along with the minced chitpotle in adobo sauce as well as a dash of ground cumin, and stir them all together.
  • Lower the heat and bring the sauce to a simmer over slow flame, stirring frequently.
  • Season with salt as well as black pepper and continue to simmer for last 10 minutes.
  • Turn off the heat and set it aside for furture use.
  • Warm up your oven to 150 degrees F and preheat the serving plates in it.
  • Pour a tsp of olive oil in a separate skillet over moderately high heat and place the tortillas, one at a time, after the oil heats up.
  • Toast the tortillas for a couple of minutes on each isde until they soften but don’t turn crispy.
  • Pile them up on a warm serving plate, inside the oven, to keep them warm while you prepare the eggs.
  • Melt a small dollop of butter in the pan over moderate heat, and crack the eggs, one by one, onto the hot skillet.
  • Cook them for about 3-4 minutes until the whites are properly done yet the yolk remains wobbly.
  • Place a tortilla on each plate and spread a layer of the prepared tomato sauce over it.
  • Top it up with a fried egg and smother it with more spoonfuls of sauce.
  • Finish it off with chopped cilantro on top and serve.
