How to Cook Grilled Halibut with Veggies

Ingredients needed to make grilled halibut with veggies:
For the fish:
- 2 halibut fillets, 6 oz each
- 1 garlic clove, minced
- 1 tbsp fresh flat leaf parsley, finely chopped
- 1 tsp dried basil, crushed
- 1 tsp freshly ground black pepper
- 1 tsp salt
- 6 tbsp olive oil
- 1 tbsp fresh lemon juice
For the veggies:
- ½ eggplant, thinly sliced
- ½ green bell pepper, thinly sliced
- ¾ zucchini, thinly sliced
- 1 ½ tsp balsamic vinegar
- 1 ½ tsp soy sauce
- 2 tbsp olive oil
- Salt and freshly ground black pepper to taste
Cooking instructions for grilled halibut with veggies:
To make the grilled fish:
- Whisk the olive oil and lemon juice together with a dash of salt and pepper, garlic, basil as well as parsley.
- Put the halibut fillets into a ziploc or any other resealable plastic bag and drizzle the marinade over them.
- Seal the bag and flip it over a number of times to coat the fish well with the marinade.
- Leave it in the refrigerator for an hour, agitating it several times at intervals.
- Preheat your grill over hot charcoal fire and grease the grill rack lightly with small amount of oil.
- Fit the rack about 4’’ above the source of heat in the grill.
- Take the fillets out of the bag and arrange them side by side on the rack; make a point to drain off any excess marinade dripping from them.
- Grill them for about 5 minutes before flipping them over.
- Cook the other side for another 5 minutes or the fish turns flaky on touch.
- Transfer the fish to serving plates and prepare the veggies.
- Whisk the balsamic vinegar, olive oil as well as soy sauce together in a small bowl and season with salt as well as black pepper.
- Add the zucchini, eggplant and bell pepper slices into the marinade and toss well to coat the veggies properly with the mixture.
- Transfer the veggies onto the hot grill rack,shaking off any extra marinade and grill them for about 10-15 minutes until they soften.
- Brush the marinade over the veggies at intervals, while they grill to prevent them from drying up.
- Arrange the grilled veggies by the side of grilled fish fillets and serve alongside a bowl of the residual mixture used for marinating the veggies.
