How to Cook Sichuan Orange Beef

Ingredients needed to make Sichuan Orange Beef:
For the beef:
- 2 beef fillet steaks
- 1 tbsp Shaoxing rice wine
- 3 1/2fl oz fresh shiitake mushrooms, sliced
- 4 tbsp fresh orange juice
- 2 tbsp light soy sauce
- 1 tbsp groundnut oil
- 2 tbsp clear honey
- Pinch of freshly ground white pepper
For serving:
- 1 spring onion, finely sliced
- 1 orange, peeled and segmented
- Mixed salad greens
Cooking instructions for Sichuan Orange Beef:
- To prepare the marinade, whisk the soy sauce, orange juice, honey and ground white pepper together until well combined and stir in a splash of rice wine; you can substitute it with dry sherry in case the former is unavailable.
- Place the beef in the marinade and flip them over to coat either side equally with the mixture.
- Wrap the bowl with a plastic sheet and set aside in the fridge for 15 minutes to marinate.
- Warm up a wok over high heat until it starts smoking and drizzle the groundnut oil into it.
- Drain out the steaks from the marinade and place them in the hot wok; set the marinade aside until necessary.
- Cook each side for a 2-3 minutes to cook them to medium-rare doneness.
- Drain them out onto two serving plates and wrap each plate with a sheet of aluminum foil; set aside for 5 minutes.
- Drizzle the marinade into the hot wok and cook it briskly for half a minute over high flame, until the sauce appears sticky.
- Stir in the shiitake mushrooms and simmer the sauce further for another 3-4 minutes or until the mushrooms turn tender.
- Splash in some water and create steam so that the mushrooms cook in it until completely done.
- Peel off the foils from the plate and drizzle the mushroom sauce around the meat.
- Place an orange segment on top of each steak and sprinkle the chopped spring onions on top.
- Serve warm alongside mixed salad greens.
