How to Cook Chicken Pepper Soup

Ingredients needed to make Chicken Pepper Soup:

  • 2 chicken legs, separated into drumsticks and thighs
  • 2 chicken breasts, chopped into 1’’ chunks
  • 3 carrots, chopped
  • 3 large potatoes, peeled and quartered
  • 3 medium white onions, chopped
  • 4 small fresh red chilies, finely chopped
  • 2 tbsp tomato puree
  • 4 tbsp dried red chili flakes
  • 2 chicken bouillon cubes
  • 3 tbsp corn oil
  • 1 ¾ pint fresh chicken stock
  • Salt and freshly ground black pepper to taste
  • chopped fresh parsley leaves, for serving

Cooking instructions for Chicken Pepper Soup:

  • Fill a saucepan with the chicken stock and heat until it starts boiling.
  • Reduce to a simmer and throw in the carrots as well as the onions.
  • Whisk the curry powder, fresh chilies and dried chili flakes into the tomato puree until they are well distributed throughout the mixture and crumble the bouillon cubes into it; stir well to mix properly into a paste.
  • Pour some corn oil in a large, heavy-bottomed casserole and wait until it turns hot over moderate heat.
  • Throw in the chicken and cook one side for a couple of minutes, or until it browns.
  • Turn them over and sear the other side in a similar fashion; work in bathes to avoid overcrowding.
  • Spoon the paste into the pan and give it a good stir to coat the chicken pieces well with the blend.
  • Continue to cook for a minute or two before pouring in the chicken stock, along with the veggies in it.
  • Stir them all together to mix well and simmer the soup for about 10 minutes.
  • Plop in the potatoes and stir them into the soup, along with a dash of salt and generous amount of ground black pepper to season.
  • Continue to simmer the soup for another 10 minutes or until the potatoes soften and the chicken pieces are cooked properly; juices should ooze out of the chicken when poked hard with a skewer at its thickest part.
  • Ladle the soup into serving bowls and top it up with finely chopped parsley to garnish.
  • Serve steaming hot with croutons, garlic bread or sweet corn pancakes to turn this starter into a wholesome meal.
