How to Cook Caramel-Coated Banana Fritters

Ingredients needed to make Caramel-Coated Banana Fritters:
For the fritters:
- 4 bananas, chopped into bite-sized chunks
- 4 ½ oz cornflour
- 6 oz all purpose flour
- 1 tsp baking powder
- 1 tsp sesame oil
- 9 fl oz sparkling water
For the caramel:
- 3 tbsp sesame seeds
- 9 oz caster sugar
For serving:
Vanilla ice cream
Cooking instructions for Caramel-Coated Banana Fritters:
- For the fritters, place the all purpose flour in a bowl and stir in the baking powder as well as the cornflour until well combined.
- Sift them into a large bowl and drizzle sesame oil over the mixture.
- Pour in water and stir them all together until they form a uniform batter, free of lumps.
- Toss the banana chunks into the batter and give it a nice stir to coat well with the mixture.
- Pour vegetable oil into a deep-bottomed frying pan until half of it is filled up and heat it to 350 degrees F.
- Dip the coated bananas into the hot oil and deep fry until they turn golden brown.
- Drain them out into a plate lined with kitchen paper, using a slotted spoon and set aside.
- For the caramel, heat the sugar in a separate frying pan until it melts completely.
- Increase the heat and continue to cook the melted sugar, without agitating it once, until it thickens to a light caramel syrup.
- Stir in the sesame seeds until evenly distributed throughout the syrup and remove from heat.
- Dip a banana fritter into the hot caramel, carefully, flip it over with the help of a fork to coat every side with the syrup.
- Transfer the fritter directly into a bowl of icy water and drain it out using a slotted spoon.
- Place it on a wire rack until all the fritters are coated with the caramel.
- Serve the caramel-coated banana fritters on top of scoops of vanilla ice cream.
