How to Cook Bean and Sausage Hotpot

Ingredients needed to make Bean and Sausage Hotpot:

  • 4 pork sausages
  • 4 rashers back bacon, smoked and roughly chopped
  • 14 oz kidney beans, drained
  • 14 oz cannellini beans, drained
  • 1 large leek, sliced
  • 1 broccoli head, cut into florets
  • 4 tomatoes, peeled and chopped
  • 1 smoked garlic clove, roughly chopped
  • 5 oz small button mushrooms
  • 1 pint beef stock
  • 4 tsp tomato puree
  • 8 oz cheddar cheese
  • 1 baguette, thinly sliced
  • Handful of parsley, finely chopped
  • 2 tbsp olive oil

Cooking instructions for Bean and Sausage Hotpot:

  • Pour a tbsp of oil in a frying pan and heat it over moderate flame.
  • Throw in the mushrooms as well as pork sausages and stir-fry for about 10 minutes or until they brown and the sausages are nearly cooked.
  • Transfer them to a bowl and set aside until they are cool enough to be handled.
  • Once cooled, chop the sausages into thick slices and set aside.
  • Heat rest of the oil in the same pan and stir-fry the bacons for a minute.
  • Add the garlic and continue to saute them for another couple of minutes or until the bacons turn crispy golden brown and the garlic softens.
  • Stir in the leeks and saute further for about 5 minutes or untl they are cooked properly.
  • Add the tomatoes along with the tomato puree and give it a nice stir.
  • Leave the sauce to simmer for about 5 minutes before pouring in the broth and return the sausage slices-mushroom mixture back to the pan.
  • Continue to simmer the sauce for about 10 minutes or until the sausages are cooked through.
  • Add both kinds of beans to the sauce and stir them well together to distribute evenly throughout the mixture.
  • Cook the mixture over moderate heat and then reduce the flame to minimum and keep the mixture warm.
  • Drop the brocolli florets into boiling salted water and cook them for about 4-5 minutes to until they soften; drain and set aside.
  • Warm up our oven at medium temperature and toast the bread slices in it.
  • Flip it over and sprinkle the grated cheese over them.
  • Return the slices to the oven and continue to grill until the cheese melts.
  • Ladle the simmering hotpot into a large serving bowl and top it up with the cooked broccoli.
  • Sprinkle the parsley on top and serve along with the grilled cheese toast.
