How to Cook Barbequed Lobster With Chili Garlic Sauce

Ingredients needed to make Barbequed Lobster With Chili Garlic Sauce:

For the sauce:

  • 2 chitpotle chilies, halved, seeded and finely chopped
  • 1 garlic bulb, cloves peeled and finely chopped
  • Juice of a lime
  • 5 fl oz light olive oil
  • ½ tsp sea salt flakes

For the lobster:

  • 2 lb live lobster, claws tightly bound.

To serve:

  • 1 lime, sliced into wedges
  • Handful of fresh cilantro leaves

Cooking instructions for Barbequed Lobster With Chili Garlic Sauce:

  • Light up your outdoor barbeque about 30 minutes before you plan to serve the dish.
  • To kill the live lobster, stuff them into a plastic bag and leave them in the freezer for half an hour.
  • Pierce them with a sharp knife, between the eyes to kill the lobster and set aside until required.
  • To make the sauce, drizzle oil in a pan and heat it over moderate flame.
  • Throw in the garlic and saute gently for about 15 minutes, while stirring frequently, until they soften but don’t change colour.
  • Stir in the chitpotle chilies, along with a splash of lime juice and sprinkle the sea salt flakes over them to season.
  • Give them a nice stir to mix and continue to stir fry for half a minute.
  • Turn off the heat and set it aside for about 3 hours.
  • Meanwhile, place the lobster on the chopping board and run a sharp knife along the middle of the body of the lobster, till into centre of its head.
  • Split it into two equal halves and throw away the green elements in its head.
  • Crack the claws with a rolling pin and leave the shell in that state.
  • Paint the garlic-infused oil all over the lobster tail meat and sprinkle a dash of salt over it to season.
  • Once the barbeque is properly heated, so that the coals turn white hot and the flames reduce, arrange the lobster halves on its rack with the flesh side facing down.
  • Grill them for about 3-4 minutes and flip it over to cook te other side until the shell turns bright red in colour; it will take about 4-5 minutes.
  • Place one lobster half in each serving plate and drizzle the chili-garlic sauce all over it.
  • Pack the hollowed head cavity with cilantro leaves and serve along side lime wedges.
