Makes: 18-20

Preparation time: 3 ½ hours

Cooking time: 15 minutes

Ingredients needed to make Dinner Rolls:

  • 5 cups bread flour
  • 2 tsp instant dry yeast
  • 1 ½ tsp salt
  • 1 egg
  • 1 egg , slightly beaten with a splash of water to serve as egg wash
  • 1 ½ cups water ( ¾ cup hot water + ¾ cup lukewarm water)
  • 3 tbsp sugar
  • ¼ cup unsalted butter, chopped into 4 pieces

Cooking instructions for Dinner Rolls:

  • Place the flour in a large mixing bowl, attached to a stand mixer and stir in the yeast, sugar and a dash of salt.
  • Pour ¾ cup hot water into a 4-cup measuring vessel and plop in the butter chunks.
  • Whisk them until the melt completely and set aside.
  • Crack one egg into another small bowl and whisk it slightly until the yolk breaks.
  • Pour it into the butter mixture and whisk them all together to blend properly.
  • Empty ¾ cup of lukewarm water into the above mixture and continue stir until well combined.
  • Drizzle this mixture gradually into the dry ingredients, while beating them together with the mixer until they leave the sides of the pan and gather together to form a smooth, slightly sticky dough.
  • Place the dough on a working surface, lightly dusted with flour and knead it until it becomes flexible and smooth out further; it should take about 8-10 minutes.
  • This can be also done using a stand mixer, fitted with a dough hook and set at moderate speed, by processing the mixture for about 10 minutes until they form a smooth, pliable dough.
  • In case, the dough appears too sticky, dust about a couple of tbsp of flour at intervals until it loses the stickiness and splash some water if it tends to become too dry.
  • Lightly oil a bowl and place the dough in it.
  • Roll it against the sides of the bowl to grease it with the oil, put a lid on and set aside for a couple of hours or until it rises to become double its original size.
  • Split the dough into 20 portions, each of about 2 oz and roll each of them into a small ball.
  • Arrange them on a baking sheet, lined with grease-proof paper, cover with a clean kitchen towel and set aside again for another hour to let it rise further.
  • Meanwhile, warm up you oven to 40 degrees F.
  • Remove the kitchen towel and paint their surface with the prepared egg wash.
  • Bake the bread rolls in the oven for about 15 minutes or until their internal temperature reaches 180 degrees F.
  • Cool the dinner rolls on a wire rack or about 10 minutes or until they cool down completely.
  • Serve with any main course of your choice.
