How to Bake Citrus-Poppy Seed Muffins

Ingredients needed to make Citrus-Poppy Seed Muffins:
- 2 cups all purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- ¾ cup granulated sugar
- ½ tsp fine salt
- ½ tsp vanilla extract
- 1 large egg yolk
- 1 large egg
- Freshly grated zest of 1 medium orange
- Freshly grated zest of 2 medium lemons
- 2 tbsp fresh lemon juice
- 2 tbsp fresh orange juice
- 3 tbsp poppy seeds
- ¾ cup whole milk
- 8 tbsp unsalted butter, melted
Cooking instructions for Citrus-Poppy Seed Muffins:
- Warm up your oven to 350 degrees F while a rack is placed midway within that oven.
- Line a 12-cup muffin pan with paper liners and grease them with a lashing of melted butter; set aside.
- Place the flour in a large bowl and stir in the sugar, citrus zests, baking powder and soda, poppy seeds well as a dash of salt until well combined.
- Crack the egg in a separate medium bowl and whisk it thoroughly along with the egg yolk and melted butter, until they blend into a uniform, pale yellow mixture.
- Add a splash each of citrus juices, milk as well as vanilla and beat them into the mixture until mixed properly.
- Fold it into the dry mixture until they blend together to form a uniform batter; avoid overmixing.
- Divide the batter between the lined muffin cups, until each of them are about 2/3 full.
- Bake them in the oven for about 25 minutes or until the muffins rises and are baked through.
- Place the muffin pan onto a wire rack, outside the oven, to cool for about 5 minutes.
- Remove the muffins from the mold and serve.
