Delicious Spinach Ricotta Tacos
This is one of the best recipes and we’re sure it will become your family favorite once you try it. Spice up fresh wilted spinach with cilantro and salsa verde cilantro before tucking inside a taco shell with garlicky ricotta for a healthy, vegetarian main dish.
Delicious Spinach Ricotta Tacos
A healthy Mexican wrap with spinach a ricotta cheese.
Ingredients
- 8 to 12 corn tortillas
- 8 ounces fresh ricotta
- 2 bunches fresh spinach, stemmed
- 2 cans green chile peppers, sliced, drained
- 1 white onion, sliced into small rings
- 1 tbsp. vegetable oil
- Kosher salt
- 1/2 tsp. ground cumin
- 3 cloves garlic, chopped
- 2 tbsp. chopped fresh cilantro
- Salsa verde,
Instructions
- In medium-sized bowl, combine ricotta, one clove garlic, and cilantro and season with salt.
- In large skillet, heat vegetable oil over high.
- Add onion and cook for about 2 minutes, or until lightly browned.
- Stir and cook for another 2 minutes or until the onions is tender.
- Add spinach (in batches), chiles, and cumin and continue cooking, stirring, for about 2 minutes, or until spinach starts to wilt.
- Add the remaining garlic and cook for another 3 minutes, or until spinach is fully wilted.
- Season with salt, transfer to a separate bowl and cover to keep warm.
- Warm all the tortillas by wrapping them in damp towel and microwaving for about 2 minutes or in a dry skillet.
- Divide equal amounts of spinach mixture among the warm tortillas.
- Spoon over the ricotta mixture, one spoonful of salsa and verde.
- Fold and serve the tortillas with more salsa.
