How to Cook Rich Thai Prawn Curry

Ingredients needed to make Rich Thai Prawn Curry:

  • 12 large king prawns

For the stock:

  • 12 retained prawn shells
  • 5 black peppercorns
  • 2 kaffir lime leaves

For the spice paste:

  • 1’’ Thai ginger, peeled and coarsely chopped
  • 1 red bird’s eye chili
  • 2 lemon grass stalks, sliced into strips
  • Handful of fresh cilantro
  • 1 garlic clove

For the curry:

  • 4 tbsp coconut milk
  •  3 ½ oz beansprouts
  • 3 ½ oz mangetout, shredded
  • 1 tbsp olive oil
  • Salt to taste

Cooking instructions for Rich Thai Prawn Curry:

  • For the stock, peel off the shells from the king prawns and dump them into a small pot; set the shelled prawns aside.
  • Fill the pot with water and drop in the peppercorns as well as the kaffir lime leaves.
  • Heat the mixture until it starts simmering and continue to do so over gentle heat for about 5-7 minutes.
  • Pass the stock through a fine mesh sieve to strain it into a bowl and return it back to the pan; keep warm over slowest heat.
  • For the spice paste, dump the garlic, ginger, lemon grass strips as well as the chili into the food processor and pulse them for several seconds before throwing in the cilantro.
  • Pulse them further into a coarse paste and set aside.
  • For the curry, drizzle oil a large, heavy-bottomed saucepan and wait until it turns hot over moderate heat.
  • Spoon in the spice paste and sauté it for a couple of minutes, while stirring often to prevent it from sticking to the base of the pan.
  • Pour in ½ pint of the prawn stock and whisk them together until well combined.
  • Add a splash of coconut milk, along with a large pinch of salt and stir further to mix well.
  • Throw in the shelled prawns into the simmering curry, followed by the mangetout and continue to cook for about 5 minutes.
  • Spoon the beansprouts into a couple of large serving bowls and pout the prawn curry on top of each.
  • Cover and set aside for 10 minutes to let the beans cook in the heat of the curry.
  • Serve and enjoy its oriental flavors!
