How to Make Valentine’s Day Cookie Hearts

Yield: 24 cookie sandwiches

Ingredients needed to make Valentine’s Day Cookie Hearts:

  • 19’’x13’’ sponge cake of your favorite flavor
  • Rolled sugar cookies (recipe below)
  • 16 oz faux royal frosting (recipe below)
  • Sprinkles, as required
  • Candy melts, as required

For the sugar cookies:

  • 5 cups all purpose flour
  • 2 tsp salt
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 2 cups sugar
  • 1 ½ cups butter, softened
  • 4 eggs

For the frosting:

  • 3 tbsp light corn syrup
  • 4 cups icing sugar
  • 1tsp lemon extract
  • 3 tbsp milk
  • Food coloring

Cooking instructions for Valentine’s Day Cookie Hearts:

  • For the cookies, warm up your oven to 400 degrees F.
  • Stir the baking powder and a dash of salt into the flour and sift the mixture into a medium bowl; set aside.
  • Whisk a mixture of sugar and cream together with an electric mixer until it turns light and fluffy.
  • Crack the eggs into it, beating them into the mixture after every addition, until all of them are incorporated into the mixture.
  • Stir in the vanilla and fold in the dry mixture gradually until they blend together to form a smooth dough.
  • Wrap it up in a plastic sheet and leave it in the fridge for a couple of hours to chill.
  • Flatten it out on a lightly-floured surface into a thin rectangle, using a rolling pin, and carve out small cookies, using heart-shaped cookie cutters.
  • Bake the cookies in the oven for about 10-12 minutes or until it browns along the edges.
  • Cool them on a wire rack while you start preparing the frosting.
  • For the frosting, whisk the icing sugar into the milk until they blend into a smooth mixture.
  • Stir in the corn syrup, along with a splash of lemon extract and beat them into a smooth and shiny frosting.
  • Whisk in few drops of food coloring and set aside.
  • Crumble the cake with your hand into fine bits and fold it into the frosting until well combined
  • Arrange half of the cookies on a baking sheet with their bottom side facing up and spread a couple of tbsp cake filling across each cookie.
  • Place the other cookie on top, with its bottom side facing down and press it slightly.
  • Leave the cookie sandwiches in the fridge for about half an hour to chill and set.
  • Take them out of the fridge and dip them into molten candy melts and fill up the gaps with the help of a spoon.
  • Shake off excess candy and spread the sprinkles on top.
  • Arrange the cookie sandwiches on a lined baking sheet and set aside until they are set.
  • Serve them to your sweetheart and win her heart on this Valentine’s Day.
