How to Cook Brioche Donuts

Ingredients needed to make Brioche Donuts:
For the brioche:
- 1 lb strong flour
- 1 ¾ oz fresh yeast
- 1 lb butter, cold and cubed
- ¾ oz + 6 tsp caster sugar
- 4 egg yolks
- 4 eggs
- 1 fl oz water
- Pinch of salt
- 1 tsp cinnamon
- Groundnut oil, for deep frying
For the filling:
- 6 Bramley apples, peeled and chopped
- Zest of a lemon
- 1 cinnamon stick
- 5 ¼ oz caster sugar
- ½ oz butter
Cooking instructions for Brioche Donuts:
- Stir the yeast in few drops of water and set at a warm place until the mixture becomes creamy and frothy.
- Stir the flour, sugar as well as as salt together in a bowl and add the yeast mixture into it, along with rest of the water.
- Crack the eggs into the mixture, followed by the egg yolks and butter cubes.
- Stir them well together and mix thoroughly with a food processor until the leaves the sides of the bowl and bind together to form a dough.
- Transfer the dough onto a lightly floured working surface and knead them with your hands to turn it into silky smooth ball of dough.
- Split the dough into golf ball sized pieces and roll them into neat balls.
- Arrange them on a baking sheet, keeping some distance between each ball and set aside in a warm place until they rise to become double its original size.
- To make the compote, melt butter in a heavy based saucepan and add the chopped apples.
- Stir in the sugar and lemon zest, along with a dash of cinnamon and heat until the fruit softens and is stewed.
- Discard the cinnamon stick and tip the contents of the pan into a squeezable plastic bottle.
- Pour oil in a deep fryer and heat it to 375 degrees F.
- Drop a small breadcrumb into the oil, if it turns golden brown after sizzling, then the oil has reached the preferred temperature.
- Shape the balls one more time, and lower them in batches, into the hot oil.
- Fry them until they turn golden brown and strain through a slotted spoon and transfer them to paper towels spread on a plate; set aside until cool enough to handle.
- Toss the caster sugar and cinnamon together and spread them in a plate.
- Roll the donuts into the above mixture until evenly coated with the cinnamon sugar and squeeze small amount of the filling into each donut.
- Serve and have fun.
