How to Make Red Velvet Cake with Cream Cheese Icing:
Red Velvet cake is one of my favorites. The cake is a light cocoa chocolate with lovely cream cheese frosting. It is great both as cake and as cupcakes!
Red Velvet Cake with Cream Cheese Icing
Red velvet cake recipe for either cake or cupcakes and cream cheese frosting. Yum!
Ingredients
For the cake
- 2 ½ cups all purpose flour, sifted
- 1 ½ cups sugar
- 1 cup buttermilk
- 2 tsp cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- 2 large eggs
- 1 tbsp white vinegar
- ½ cup butter, softened
- 2 oz red food colouring
For the icing:
- 8 oz cream cheese, softened
- ½ lb+2 tbsp confectioner’s sugar
- ¼ cup butter, softened
- 1 tsp vanilla extract
Instructions
- Warm up your oven to 350 degrees F and lightly oil three medium sized baking pans.
- Empty the cups of flour into a medium sized mixing bowl and stir in the cocoa powder as well as salt; set aside.
- Whisk the butter with an electric mixer, at moderate speed, until it turns fluffy.
- Crack the eggs into it, one after another, and continue to whisk until they are properly blended; set aside.
- Pour the buttermilk into a 4- cup measuring container and add a splash of vinegar to it.
- Stir in the baking soda until it the mixture starts giving out bubbles and set aside.
- Add a portion of the dry mixture into the egg-butter mixture, followed by a small portion of the buttermilk mixture, while whisking with your electric mixer at low speed.
- Continue to add the dry and buttermilk mixture alternately into the egg-butter mixture, until they are completely incorporated.
- Increase the speed of the electric mixer to medium and continue to beat the final cake batter for another couple of minutes before pouring it into the pre-greased cake pans.
- Bake the cakes in the oven for about 25 minutes at the preheated temperature.
- Place them in the wire rack and allow to cool for another 10 minutes.
- De-mold the cake and place them on separate platters; slice each cake crosswise to divide it into two equal halves
- To make the icing, whisk all its ingredients with the electric mixer until they turn smooth and gooey.
- Spread the icing on top of each halves and pipe out beautiful decorations on top of the cake.
- You can embellish it with toasted walnuts, pecans or shaved chocolate and refrigerate until the time for serving arrives.
