How to Make Japgwapyon

Ingredients needed to make Japgwapyon:
- 2 cups sticky rice flour
- 4 dates
- 2 dried persimmons
- 4 tbsp pine nuts, chopped
- 10 chestnuts, boiled, peeled and finely diced
- 1 tsp salt
- 3 tbsp honey
Cooking instructions for Japgwapyon:
- Cut the dried persimmons and scratch out the seeds from them; set aside.
- Process the dates in a similar fashion and chop both of them into fine pieces.
- Toss the seeds into a mortar and pound them into a fine powder with a pestle.
- Place the chopped dates, persimmon, pine nuts as well as chestnuts into a bowl and sprinkle the ground seed over them.
- Stir them all together until well combined and set aside.
- Place the rice flour in a large mixing bowl and stir in a dash of salt.
- Empty ¾ cup water into it and stir it into the flour until the mixture clump together to form a flaky dough.
- Knead the dough briefly and split it into 1’’ balls.
- Bring water in a medium pot and drop in the dough balls.
- Cook them for several minutes or until float up onto the water surface and drain them out into a colander.
- Wash them under cold running water to bring down their temperature and place them in a bowl.
- Dip the rice balls, one at a time, into honey and transfer them into a bowl of dried fruits-nut mixture.
- Roll them to coat evenly with the mixture and place them on a serving plate.
- Set them aside for about 10 minutes to rest and serve.
