How to Make Bacon And Cashew Brittles
Yields: 1 lb brittle

Ingredients needed to make Bacon And Cashew Brittles:
- 2/3 cup raw cashews
- ¾ cup water
- 2 cups granulated sugar
- 8 zo bacon
- 1 tbsp soda
- ¼ tsp sea salt
Cooking instructions for Bacon And Cashew Brittles:
- Place a rack midway within an oven and warm it up to 400 degrees F.
- Scatter the cashews onto a baking sheet and place in the hot oven to toast for about 15 minutes, stirring it at times, until they turn deep brown in colour.
- Transfer them onto a chopping board and set aside until cool enough to handle.
- Chop them into rough pieces and set aside.
- Arrange the bacon slices onto a clean baking sheet and cook them in the oven for about 15 minutes or until they are cooked through and brown nicely.
- Transfer them onto a plate, lined with paper towel and set aside to cool; keep 1 tbsp of the bacon dripping aside and throw away the rest.
- Place a sheet of parchment paper on top of a baking sheet and grease with the reserved bacon dripping; set aside.
- Place the sugar in a medium saucepan and pour in water.
- Heat the mixture over high flame, while stirring at times, until the sugar dissolves completely; it should take about 3 minutes.
- Continue to cook for about 10 minutes, while stirring it often, until the mixture turns deep amber in colour and its temperature rises to 350 degrees F.
- Turn off the heat and fold in a splash of soda, cashews and salt until well combined.
- Crumble the cooked bacon into it and give it a nice stir until distributed evenly throughout the caramel.
- Pour this brittle mixture onto the lined baking sheet and spread it immediately with a spatula into an even layer.
- Set aside at room temperature for 20 minutes or until it hardens completely and let it rest until it cools down to room temperature.
- Break it into smaller pieces and store at room temperature in an air-tight container.
- Tuck them in and enjoy!
