How to Cook Pork Chops Alla Pizzaiola

Ingredients needed to make Pork Chops Alla Pizzaiola:

  • 2 ( 12 oze each) pork loin centre-cut chops, bone-in and each 1’’ thick
  • 1 small onion, peeled and thinly sliced
  • 1 tbsp fresh Italian parsley leaves, chopped
  • 1 can (15 o) diced tomatoes, juice retained
  • ¼ tsp dried red pepper flakes, plus more if necessary
  • 1 tsp Herbs de Provence
  • Salt and freshly ground black pepper to taste
  • 2 tbsp olive oil

Cooking instructions for Pork Chops Alla Pizzaiola:

  • Heat a dash of oil in a large, heavy-based sauté pan over moderate flame.
  • Rub a large pinch of salt and fair amount of ground black pepper on either side of each pork chop to season.
  • Lay out both of them onto the hot skillet and cook one side for 3-4 minutes, or until it is seared and their internal temperature rises up to 160 degrees F, as indicated by an instant-read thermometer.
  • Flip it over and sear the other side for another 3-4 minutes before transferring them onto a plate.
  • Cover loosely with a sheet of aluminum foil to keep warm.
  • Toss the sliced onion into the same pan and sauté for 4 minutes, stirring often, until they turn soft yet retain a hint of crispness.
  • Empty the can of tomatoes, along with its juices and sprinkle the red pepper flakes as well as Herbs de Provence over them.
  • Give them a nice stir to mix well and place a lid on top to cover.
  • Bring it to a simmer and continue to do so for the next 15 minutes, while stirring the sauce from time to time, until it appears a tad thicker than before.
  • Stir in a dash of salt and red pepper flakes, in case you prefer more heat.
  • Arrange the browned pork chops onto the simmering sauce and drizzle the accumulated juices of the plate over them.
  • Give them a nice stir to coat well with the pizzaiola sauce and turn off the heat.
  • Place a pork chop onto each serving plate and drizzle the hot sauce over them.
  • Garnish with a sprinkling of chopped parsley on top and serve warm.
