How to Cook Beef Kalbi
Serves: 4-6

Ingredients needed to make Beef Kalbi:
- 3 lb Korean-style beef short ribs
- 4 medium garlic cloves, finely chopped
- 4 scallions, trimmed and minced
- 2 tbsp soju
- ½ cup soy sauce
- 1/3 cup Korean malt syrup
- ½ cup pineapple juice
- 2 tbsp sesame oil, toasted
- 2 tbsp light brown sugar, packed
- ½ tsp freshly ground black pepper
- 2 tbsp toasted sesame oil
- 1 tbsp toasted sesame seeds, to serve
Cooking instructions for Beef Kalbi:
- Pour the pineapple juice in small bowl and whisk in a bout of soju, soy sauce, malt syrup and sesame oil until well mixed.
- Stir in the garlic, scallions, brown sugar and a dash of pepper until they are distributed evenly throughout the marinade and the sugar melts.
- Stuff the ribs into a large Ziploc bag and pour in the marinade.
- Seal and flip the bag over several times to coat the meat well with the blend and leave in the fridge overnight to marinate.
- Warm up your outdoor grill over hot charcoal fire and grease its grate with an oil-drenched paper towel.
- Take the marinated ribs out of the fridge and set aside for about 20 minutes or until they rise up to room temperature.
- Drain the meat out of the marinade and allow the excess mixture to drip off.
- Place them on the oiled grill grate, 1’’ apart from each other and grill one side for 5 minutes, or until it turns crispy along the edges.
- Flip it over and grill the other side in a similar fashion until it is seared and well done.
- Transfer them onto a large serving platter and scatter the toasted sesame seeds on top.
- Serve just like that as a starter or with cooked rice.
