How to Cook Beef in Oloroso Sherry

Ingredients needed to make Beef in Oloroso Sherry:
For the beef:
- 4 slices (7 oz each) beef fillet, sliced into ½’’ strips
- 1 jar (8 oz) piquillo peppers, drained and sliced
- 1 garlic clove, peeled and finely diced
- 4 fresh mint sprigs, chopped
- 4 fresh parsley sprigs, leaves picked and chopped
- 1 fresh rosemary sprig
- 6 tbsp dry oloroso sherry
- 2 tbsp extra virgin olive oil, plus more for drizzling
- Salt and freshly ground black pepper to taste
For serving:
- Pinch of smoked paprika
- 1 oz flaked almonds, toasted
- 2 heads crisp lettuce, leaves separated and shredded
Cooking instructions for Beef in Oloroso Sherry:
- To make the beef, sprinkle a dash of salt and fair amount of black pepper all over the beef strips and toss them until well coated with the seasonings.
- Drizzle oil in a non-stick skillet and heat it over high flame until it gives out smokes.
- Toss the seasoned beef strips into it, along with the garlic and a rosemary sprig and sauté for a couple of minutes, stirring constantly, until the meat browns.
- Throw in the pepper slices and continue to sauté for another minute, stirring often, and add a splash of sherry into it.
- Cook the mixture over moderately high heat until it starts boiling and continue to do so for about 2-3 minutes or until most of the cooking liquid ebbs away.
- Turn off the heat and fold in the chopped herbs until they are distributed evenly throughout the mixture.
- To serve, sprinkle the shredded lettuce on top of each serving plates and spoon in the braised beef and veggies.
- Drizzle the cooking juices over them and bather each serving with an extra lug of olive oil.
- Sprinkle a dash of smoked paprika on top of it and finish it off with flaked almonds on top.
- Serve right away.
