How to Cook Stuffed Mithai

Ingredients needed to cook Stuffed Mithai
- ½ cup semolina
- 1 tsp rose water
- 1 tsp orange blossom water
- 3 cups water
- 2 cups all purpose flour
- Oil, for frying
For the filling:
- 4 tbsp semolina
- 2-3 white bread slices
- 1 cup powdered milk
- 1 tbsp butter
- 1 cup water
For the syrup:
- 3 cups sugar
- 2 tsp fresh lemon juice
- 1 ½ cups water
Cooking instructions for stuffed mithai:
- Mix the semolina and flour together into a bowl and empty the cups of water to it, followed by both kinds of essence waters; combine them into a smooth batter with minimal lumps.
- Drizzle oil in a non-stick pan and heat it up over moderate heat but don’t let it smoke.
- Spoon a couple of tbsp of the batter on the pan and cook one side until it browns slightly along the edges ; set aside.
- Cook rest of the crepes, using the batter in a similar fashion.
- To make the filling, dissolve powdered milk in a cup of water and stir in 4 tbsp semolina.
- Heat the mixture until it thickens and whisk in the butter.
- Crumble the bread slices into the above mixture, stir them all together and cook until the filling attains a smooth cream like texture and set aside
- To cook the syrup, boil a mixture of sugar in water for 7-10 minutes, until the former dissolves.
- Add a splash of lemon juice, give it a nice stir and continue to heat the mixture for 2 more minutes; turn off the heat and set aside to cool.
- Spoon in a tbsp of the creamy filling on the middle of the crepe and fold one of its end over the filling and seal it with the other edge to make half-moon like structure.
- Make rest of the stuffed mithai in a similar fashion.
- Pour enough oil in a deep-bottomed saucepan so that it rises few inches above the pan, heat it over moderate flame and gently lower the stuffed sweets into the hot oil.
- Fry them in batches until golden brown in colour and soak away any excess oil with a paper towel.
- Soak them into a bowl of cold sugar syrup and set aside for some time until the sweets absorb the syrup.
- Strain them out with slotted spoon and arrange them on a serving plate.
- Serve and enjoy!
