Beef and Bean One Pot Meal

This beef and been one pot meal uses ground beef with a bit of bacon for extra flavor. If you want to lighten it up, you can use ground turkey. It is a  good, hearty, one-pot meal. Perfect for a cold Winter’s evening.

Beef and Bean Pot

Cook Time: 50 minutes
Total Time: 1 hour

Lean ground beef, kidney beans, chilli and bacon. Easy to make and tastes delicious.

Ingredients

  • 14 oz lean ground beef
  • 1 onion, chopped
  • 6 slices bacon, diced
  • 1 tbsp white vinegar
  • 1 tbsp mustard
  • 2 tbsp tomato puree
  • 1 x 14oz can chopped tomatoes
  • 1 green pepper, chopped
  • 2 x 15 oz cans kidney beans
  • 1 - 2 red chillies, chopped
  • 4 oz parmesan, grated

Instructions

  1. Preheat the oven to 375F/190C.
  2. In a large pan, over a medium heat, saute the ground beef, onion and bacon for 5 - 10 minutes or until the meat is browned and the onion clear.
  3. Drain off the excess fat.
  4. In a 3 quart casserole dish, mix together the meat with all the ingredients except the parmesan cheese. Make sure the mixture is well-blended.
  5. Bake for 45 - 50 minutes.
  6. Remove from heat and sprinkle with the parmesan cheese.
  7. Return to the oven and bake for another 5 - 6 minutes, or until the cheese is melted.
  8. Serve immediately.
