How to Cook Salmon Fishcakes with Garlic Mashed Potatoes

Ingredients needed to make salmon fishcake with garlic-mashed potatoes:

For the fishcake:

  • 2 cups barbequed, boneless salmon fish meat, coarsely crumbled
  • 1 cup parmesan cheese, grated
  • 2 large eggs
  • 2 celery stalks, finely chopped
  • ½ white onion, finely chopped
  • Salt and freshly ground pepper to taste
  • Vegetable oil, for frying

For the garlic-mashed potatoes:

  • 5 large potatoes, peeled
  • 2 garlic cloves, finely chopped
  • ¼ cup butter
  • 1 cup milk
  • Handful of fresh chives, chopped
  • Salt and freshly ground black pepper to taste

Cooking instructions for salmon fishcakes with garlic-mashed potatoes:

  • To make the fishcakes, add all its ingredients in a large bowl and combine them together until properly blended.
  • Split the fish mixture into four equal portions and shape each of them into cakes; press the surface gently to flatten them out a bit.
  • Leave them in the refrigerator for an hour or more.
  • Spread some vegetable oil in a medium-sized skillet and heat it up over moderately high flame.
  • Place the fish cakes side by side, two at the time, and cook them until they turn golden brown; it would take about 5-6 minutes for each side.
  • Transfer them to a plate, lined with paper towel to drain off extra oil.
  • Sprinkle a dash of black pepper as well as salt and allow them to cool while you prepare the mashed potatoes with a hint of garlicky flavour.
  • Meanwhile, fill a large pot with water and stir in some salt.
  • Drop the potatoes in it, bring it to a boil and continue to cook over lowered heat for about half an hour or until they soften.
  • Drain off the water and transfer the potatoes to a bowl.
  • Mash them with a fork or potato masher into a smooth mass and stir in the garlic.
  • Drizzle oil over it, followed by a cup of milk and whisk them together into a creamy mixture.
  • Season with a dash of salt as well as pepper and sprinkle the chopped chives on top.
  • Give it a nice stir to mix and set aside.
