How to Cook Chicken Calzone

Makes: 2

Ingredients needed to make chicken calzone:

For the dough:

  • 1 2/3 cup all purpose flour
  • 1 package active dry yeast
  • 2/3 cup warm water
  • ½ tsp salt
  • 1 tbsp sugar
  • Vegetable oil, as required

For the filling:

  • 1 cup cooked or leftover chicken, shredded
  • ½ cup parmesan cheese
  • ½ cup Mozzarella cheese
  • 1 cup spinach, rinsed and dried
  • 6 button mushrooms, sliced
  • Salt and freshly ground black pepper to taste

Cooking instructions for chicken calzone:

  • Warm up your oven to 475 degrees F.
  • To make the dough, dissolve sugar in warm water and stir in the yeast; set the mixture aside until the yeast becomes active.
  • Combine the flour and salt together and sift them into a large mixing bowl.
  • Drizzle vegetable oil over the mixture and blend them thoroughly with a fork.
  • Once the yeast-sugar mixture becomes bubbly, pour it into the above mixture and stir them all together to form a moist dough.
  • Dust your kitchen’s working counter with flour and knead the dough on it for couple of mintues or until it becomes elastic.
  • Transfer it into a bowl and cover with a cling film; set aside for about 15 minutes to let it rise.
  • Meanwhile, heat a skillet over high heat and toss the mushrooms into it.
  • Stir-fry them for about 3-4 minutes or until they brown and most of the liquid, oozing out of the mushrooms, disappears.
  • Now, transfer the dough to the floured surface and knead it again for half a minute.
  • Split it into two equal portions and roll each of them into a rectangular log, about ¼’’ thick.
  • Spoon half of the browned mushrooms along one of the longer side of the log and top it up with shredded chicken.
  • Lay the spinach in a single layer and finish it off with both types of grated cheese, one after another.
  • Wrap the other half over the filling and press the open ends together to seal; make the other calzone in a similar fashion.
  • Put the calzones in the oven and bake for about 10-12 minutes or until the surface turns golden brown.
  • Allow to cool for 3-4 minutes and cut it into 3-4 slices.
  • Serve and dig in!
